This recipe makes a quick and easy dish in under 15 minutes.

Ingredients

  • 8 oz rice noodles (pad thai or wide ribbon style)
  • 1 cup unsweetened, plain soy milk
  • 1 1/2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 tsp maple syrup (or agave)
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • Optional: green onions and sesame seeds

Instructions

  1. Bring a pot of water to a boil and start cooking your noodles.
  2. In a small bowl, whisk your sauce ingredients until combined, then add them to a saucepan and bring to a simmer.
  3. Toss your noodles in the sauce and cook just until the sauce sticks well to the noodles.
  4. You can optionally top the noodles with green onions and sesame seeds.
