Ingredients

  • 8 oz rice noodles (pad thai or wide ribbon style)
  • 1/2 cup peanut butter
  • 1/2 cup starchy noodle water
  • 5 tsp soy sauce
  • 2 tsp toasted sesame oil
  • 1 1/2 tsp to 2 tsp chili flakes (or to taste)
  • 1 tsp lime juice
  • 1 tsp maple syrup
  • 1/2 tsp grated fresh ginger
  • 1/2 tsp grated fresh garlic
  • Optional: green onions, sesame seeds, and roasted peanuts (crushed)

Instructions

  1. Bring a pot of water to a boil and start cooking your noodles. Save a 1/2 cup of starchy water.
  2. In a small bowl, whisk your sauce ingredients (including the starchy water) until combined, then add them to a saucepan.
  3. Toss your noodles in the sauce.
  4. You can optionally top the noodles with green onions, sesame seeds, roasted peanuts, and even more chili flakes.

Notes

If you have a low spice tolerance, you can lower it to 1 tsp chili flakes. If it's not spicy enough, add more chili flakes on top.


If you don't have fresh garlic or ginger, you can try substituting with garlic and ginger powder, but use less, as the dry spice flavor is more concentrated.
