Ingredients

  • 2 tbsp neutral cooking oil
  • 8 oz extra firm tofu (cut into small cubes)
  • 1/4 cup green onion (just the white stem)
  • 3 cups cooked short-grain Japanese rice (day-old, and refrigerated)
  • 1 tbsp + 1 tsp soy sauce
  • 1/2 cup shelled edamame
  • 1/3 cup green onion (green part)
  • 1/2 tsp salt
  • 1/4 tsp white pepper (will still taste good with black pepper, but they are not the same)
  • 2 tsp vegan butter (optional)
  • 1 tsp toasted sesame oil
  • 1/4 tsp MSG (optional)

Instructions

  1. In a non-stick pan, heat the 2 tbsp of cooking oil to a medium-high temperature, then add your cubed extra firm tofu and the white stems of your green onion. Cook until the tofu crisps lightly, stirring to ensure it crisps evenly.
  2. Then add your cold, day-old rice, press it down, and mix it in. Add your soy sauce and shelled edamame. Don't lower the heat, but stir constantly so the rice doesn't stick to the pan.
  3. Once all the ingredients are fully combined, turn the heat to a low temperature, then add the green part of your green onion, salt, and white pepper. Stir and cook for a minute.
  4. Turn the heat off, add your vegan butter, toasted sesame oil, and MSG. Serve and enjoy!
