Ingredients

Bars
  • 2 1/2 cups all-purpose flour
  • 3/4 cup canola oil
  • 3/4 cup light brown sugar, packed
  • 1/2 cup pumpkin puree
  • 2 tbsp non-dairy milk
  • 1/2 teaspoon salt
  • 1 tbsp cinnamon
  • 1 tbsp pumpkin pie spice
  • 1 tbsp vanilla extract
Topping
  • 6 or more tbsp apple butter
Cinnamon streusel (scalable):
  • 1/2 cup all purpose flour
  • 1 tsp ground pumpkin spice
  • 1/3 cup light brown sugar
  • 5 tbsp vegan butter, melted
  • 1 tsp vanilla extract
  • 1/8 tsp sea salt
Icing
  • 1/2 cup powdered sugar
  • 2 tbsp non-dairy milk
  • pinch of salt

Instructions

  1. Preheat the oven to 325°F
  2. Mix all the ingredients for the bars in one bowl
  3. Press into a non-stick or parchment paper covered 9 x 13 inch dish
  4. Bake for 15 minutes at 325°F. While it’s baking prepare the cinnamon streusel.
  5. Remove the dish from the oven and raise the temperature to 350°F. Spread the apple butter, and top with the streusel.
  6. Put the dish back into the oven and bake for 30 to 40 minutes.
  7. Remove and let cool for 2 hours or just refrigerate it. Top with icing and serve.
  8. (Best served cold/refrigerated)
