All Crust Pumpkin-Apple Butter Bars

(18 servings)

Ingredients:

Bars (one bowl):

  • 2 1/2 cups all-purpose flour

  • 3/4 cup canola oil

  • 3/4 cup light brown sugar, packed

  • 1/2 cup pumpkin puree

  • 2 tbsp non-dairy milk

  • 1/2 teaspoon salt

  • 1 tbsp cinnamon

  • 1 tbsp pumpkin pie spice

  • 1 tbsp vanilla extract

Toppings:

  • 6 or more tbsp apple butter

Cinnamon streusel (scalable): 

  • 1/2 cup all purpose flour

  • 1 tsp ground pumpkin spice

  • 1/3 cup light brown sugar

  • 5 tbsp vegan butter, melted

  • 1 tsp vanilla extract

  • 1/8 tsp sea salt

Icing:

  • 1/2 cup powdered sugar

  • 2 tbsp non-dairy milk

  • pinch of salt

Instructions:

  • Preheat the oven to 325°F

  • Mix all the ingredients for the bars in one bowl

  • Press into a non-stick or parchment paper covered 9 x 13 inch dish

  • Bake for 15 minutes at 325°F. While it’s baking prepare the cinnamon streusel.

  • Remove the dish from the oven and raise the temperature to 350°F. Spread the apple butter, and top with the streusel.

  • Put the dish back into the oven and bake for 30 to 40 minutes.

  • Remove and let cool for 2 hours or just refrigerate it. Top with icing and serve.
