Ingredients

Filling
  • 2 lbs apples (I prefer Honeycrisp, but feel free to use your favorite)
  • 1/2 cup granulated cane sugar
  • 1 tbsp flour
  • 1 tsp ground cinnamon
  • 2 tbsp lemon juice
Topping
  • 2 cups rolled oats
  • 2 cups all-purpose flour
  • 2 cups brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup unsalted vegan butter (melted)

Instructions

  1. Preheat the oven to 350°F.
  2. Peel the apples and cut into 1/2-inch cubes
  3. Place the cubed apples in a bowl and mix with your sugar, flour, and cinnamon, then pour in your lemon juice. Toss, then spread evenly out in an 9x13 baking dish.
  4. Mix all your topping ingredients except the butter until evenly combined, then slowly pour in your melted butter while mixing with a spatula. Mix until clumps form, like wet sand.
  5. Crumble the topping over the apple filling, then transfer to the oven to bake for 35-45 minutes or until golden brown.
