Ingredients

  • 1 tbsp olive oil
  • 1 lb medium or regular firm tofu
  • 1/2 cup unsweetened soy milk
  • 2 tbsp nutritional yeast
  • 2 tbsp salted vegan butter
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground black pepper
  • Optional toppings: Chives, salt + pepper

Instructions

  1. Heat a medium skillet with olive oil on medium heat. Drain your medium or regular firm tofu of any excess water. Crumble the tofu with your hands into the skillet to begin cooking.
  2. Scramble the tofu with a spatula and let the tofu cook, stirring occasionally, for about 3 minutes on medium heat
  3. While the tofu is cooking, whisk together the remaining ingredients (except the butter) in a small bowl.
  4. Once the tofu has cooked for around 3 minutes, add your vegan butter, then pour in the batter and sauté the tofu in the batter for 3 minutes, until the mixture begins to absorb into the tofu.
  5. Cook down the liquid more for firmer tofu scramble, or serve after a few minutes of cooking. Top with salt and pepper to taste, along with chives if you have any, and enjoy!
