Creamy Spinach Pasta Sauce

Ingredients
- 5 ounces of spinach
- 1 pounds of silken tofu
- 1/3 cup olive oil
- 1/4 cup basil (packed)
- 1/4 cup nutritional yeast
- Half a lemon or around 3 tbsp lemon juice
- 8 cloves of garlic
- 1 1/2 tsp salt
- 1 tsp ground black pepper
Instructions
- Add all ingredients to a large blender and blend until you get a smooth, consistent texture.
- Pour into a saucepan and bring to a simmer, uncovered, for 3 minutes.
- Add in your pasta of choice and enjoy!
- You can top it with either nutritional yeast, vegan parmesan, sliced almonds, pine nuts, ground black pepper, or chili flakes.
Notes
The sauce goes especially well with ravioli, but it’s delicious with any other pasta!
