Barbecue Seitan Skewers (no grill)

Ingredients
Seitan
- 1 1/4 cups vital wheat gluten
- 2 tbsp nutritional yeast
- 1 tbsp paprika
- 1 tbsp garlic powder
- 2 tsp onion powder
- 1 tsp ground black pepper
- 3/4 tsp salt
- 1/2 tsp ground cumin
- 1 cup of warm water
Cooking
- 1 tbsp + 1/4 cup cooking oil
- 1 cup of water
Sauce
- 1/3 cup brown sugar
- 2 tbsp hot sauce (I used Cholula)
- 2 tbsp agave or maple syrup
- 2 tbsp soy sauce
- 2 tsp paprika
- 1/2 tsp msg (optional)
Instructions
- Whisk together the dry seitan ingredients, then pour in warm water. Use your hands to combine the dry ingredients with the water, but do not knead the seitan.
- Once fully combined, break apart into chunks of preferred size. Put your chunks into a large nonstick pan.
- Coat your seitan with a tablespoon or two of oil to prevent sticking and 1 cup of water, then bring the pan to a medium to high heat. Cover to let it steam for 8 minutes.
- Uncover and flip the seitan pieces over. Add your 1/4 cup of cooking oil, let the seitan get crispy for 10 minutes, while turning it over and letting it get crispy on both sides.
- Whisk together the sauce, lower the heat to medium, and pour over the seitan in the pan.
- Turn over the seitan pieces and make sure they’re evenly coated. Make sure to let the sauce thicken, but don't let the sugar burn in the process; then turn off the heat.
- Poke skewers through the seitan, then serve and enjoy!
