Ingredients

  • 7oz softened butter
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 vegan eggs (use Bob’s Red Mill egg replacer)
  • 3 tsp vanilla
  • 1 & 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 3 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups oats
  • 8oz semisweet chocolate chips

Instructions

  1. Heat oven to 350°F.
  2. In a large bowl, beat butter and sugars on medium speed with an electric mixer until creamy.
  3. Add vegan eggs and vanilla; beat well.
  4. Add combined flour, baking soda, cinnamon and salt; mix well.
  5. Drop dough by rounded tablespoons onto ungreased cookie sheets.
  6. Bake 8 to 10 minutes or until light golden brown.
  7. Let cool for 1 minute on cookie sheets; remove to wire rack to prevent further cooking.
  8. Let cool completely and enjoy!
